Prepare to Prepare - Inclement Weather

Hurricane Matthew is looming, and winter is approaching - What better time to get your supplies, plan and kits ready.  

I recommend - keep it simple - what you eat, what you need.. My main “go Kit” (I do have this ALWAYS ready)  the big evacuation TUB is filled with the following:

Nuts, cranberries, dates, meal bars, juice boxes, peanut butter, crackers, graham crackers, dried venison jerky, hubby likes sardines, so I pack this for him ( I circulate  - use and replace).
Dog food.
Enough water for three days per person and dog. (actually, I am obsessed, I have 7 days ALWAYS)
I add games, like old maid, rook, regular cards, Yahtzee.
Flashlights and batteries.
Personal Hygiene items, to include wipes.
I have a change of clothes for each person, make sure I have socks!

In a separate ‘go kit’ each commuter car has a sleeping bag, blanket and a backpack for 3 days (water, personal items, food and a change of clothes)

I also have a "work go kit", in case I can't make it home.

If I KNOW storm is coming:

I make sure laundry is done!  - crazy huh?

I make sure all trucks have fuel - never now if we have to leave.
Generator is checked every 30 days and I make sure I have fuel - so I am good here (except we sold it, so not good, but we have a perm. one being installed)

I refill all of the following:
3 refillable 5- gallon water jugs (mainly for pups)
10 - 1 gallon refillable waters jugs (mainly for pups)
I also fill my bathtub up so we can use to dump water in the toilet. (well thing)

I check my water supply and make certain I have:

1 gallon of drinking water per person a day stored for 7 days.

I have in my chest freezer with frozen  water in 20- 1 gallon jugs  -  It helps to keep your food when power goes out. (we don't run the generator 24/7)
I always have camping propane bottles so cooking  rice and oatmeal is a snap on a camp stove, and of course - I can rely on my go kit.

I have a wind up radio
And backup flashlights

My car, has a generator - (love me my Tacoma, so, I can run an appliance, or charge a phone battery).

On my end note: If you have children, plan for them, storms and shelters can be scary - this is why I say pack a game, pack their favorite snacks if you have time to plan.

Zucchini Muffins - Hooterville Cooks

Zucchini Muffins - made with the one and only zucchini I was able to grow this year.. Bad garden year for me.

My new recipe find and test was using Flax Seed and Whey Powder. (no palina is for a new recipe, yet to try)

This recipe I found on the Atkins Blog… and I had to try it, I sure missed having my muffins…But no MORE!

Ingredients: large Eggs (Whole), 2 tbsps Canola Vegetable Oil ,1 tsp Vanilla Extract ,4 1/2 oz Zucchini 1 cup Organic 100% Whole Ground Golden Flax seed Meal ,1 oz Vanilla Whey Protein ,1/3 cup Sugar Substitute), 1 1/2 tsps Cinnamon, 3/4 tsp Baking Powder, 1/4 tsp Salt, 1/8  tsp Allspice Ground, 1/8 tsp Nutmeg (Ground)  (I also added a Tablespoon of unsweetened coconut and used pumpkin pie spice - I was plumb out of baking spices except for pumpkin!)

Directions: 1. Preheat an oven to 350°F. Grease 6 wells of a standard nonstick muffin tin. 2. Combine the eggs, oil and vanilla in a small bowl. Using a whisk beat until frothy about 1 minute. Shred the zucchini, add it to the bowl mixing to combine. 3. Add the flax meal, protein powder, granular sugar substitute, baking powder, salt, and spices. Mix with a spoon to combine. 4. Bake for 25 minutes until slightly puffed, golden and cooked through. Enjoy!

Lemon Cheese Cake…Hooterville Style

Low Carb, Gluten Free  - Taste Good and Satisfying…I love to bake, and I felt a bit depressed when I switched to gluten free/low carb...I did reading and extensive searching and found that I can still eat my favorite foods, just prepared with different ingredients.  I am growing to like the bread  - it requires taste adjustment -  as it is not the same texture I like. (working on this)
I have come familiar with Erythritol and Xylitol (I read some fuss on this.. But sugar is worse, in my opinion)

I love Cheese Cake - Lemon too,,, so I tried a few and finally hit the jackpot…. Oh, yes, this is a keeper….  I found on the internet - “Cleochatra’s Ultimate Cheesecake - Your Lighter Side”  I followed the recipe as it is stated,,, It is a Keeper!!  I have lost a size and 12 pounds in 4 weeks - Not bad as a benefit to monitor my blood sugar and Gluten - And I get the Cake too!

Makes 16 servings. Nutritional Information for one serving: Calories: 351, Carbohydrates: 29g, Fiber: 2g, Sugar Alcohols: 21g, Net Carbs: 6g, Protein: 8g, Fat: 8g

BREAD - you can eat, WAIST forgiving TOO!

I made a decision to lose some pounds... again!! I know, some of us struggle... After two knee replacements and health issues, I gained 20 pounds... I have recently dropped 12 pounds in 4 weeks.... I ditched sugar and carbs.... Today, I made some bread.  I absolutely Love Bread- toasted with JAM...  I make jam and I find I give it mostly away due to the fact I can't eat gluten, not allergic to gluten, just causes me to retain weight and other issues.

I have been searching the internet for bread recipes and taking advantage of the hard work folks put into developing their favorite recipe,,, I would share the recipe, but I don't have the permission yet... I give credit where credit belongs....
