Holidays, Home, Happiness - all are in Hooterville this year.  After a few tough years, I have found my Joy again.   Life is where you are – Home is where you are at – this is me in Hooterville!

This week I purchased my first holiday music in 5+ years, it was Amy Grants new Tennessee Christmas – I bought it because I heard that “Christian” stores did not want to sell her new Album because it was not “Christian” enough?  Really? I bought it for that reason – Gee, I can’t assume I know what Christian enough is? – by the way – two thumbs up and a snap – worth it – put this on your list for your music lovers!

Baking is what I love to do and especially this time of year - I found a new Bakery about 15 miles (round trip) from me (on the way to/from work) – the Red Truck Bakery in Marshall, VA.  – makes the best cinnamon rolls, the right balance of spices, texture of dough and enough sweetness - it is my thank you Holiday Hallelujah! – I no longer have to make them – I can buy my ‘fix’ and be happy and not over indulge from the pan I made staring at me! I still make my cookies - of course!

Holiday Decorating is simple, I put up some LED lights, that I can leave up all year – they offer a soft lighting that softens the room and brings me peace all throughout the year.

My tree is live and I plant them in my yard, each year now, for ten years, I have planted a new tree– I get to reflect on each tree and I think back to that year and give gratitude.

Holiday gift giving is now about simple, homemade, local and organic – I love shopping in the small businesses close to me,  I find such great products, like local honey, local salt, maple syrup, cranberry sauce – bird treats and unique gifts…. What fun it is to find something that I know will be enjoyed and cherished!   I found a jar spoon - OMG - Love the Brits!

What you  do or however you celebrate the holiday - Enjoy the simple things this time of year, a nice quite family dinner, bake that special batch of cookies, eat that pancake with butter and syrup - find that Holiday Hallelujah in your life!  Be Happy Be Grateful!  

Zucchini Muffins - Hooterville Cooks

Zucchini Muffins - made with the one and only zucchini I was able to grow this year.. Bad garden year for me.

My new recipe find and test was using Flax Seed and Whey Powder. (no palina is for a new recipe, yet to try)

This recipe I found on the Atkins Blog… and I had to try it, I sure missed having my muffins…But no MORE!

Ingredients: large Eggs (Whole), 2 tbsps Canola Vegetable Oil ,1 tsp Vanilla Extract ,4 1/2 oz Zucchini 1 cup Organic 100% Whole Ground Golden Flax seed Meal ,1 oz Vanilla Whey Protein ,1/3 cup Sugar Substitute), 1 1/2 tsps Cinnamon, 3/4 tsp Baking Powder, 1/4 tsp Salt, 1/8  tsp Allspice Ground, 1/8 tsp Nutmeg (Ground)  (I also added a Tablespoon of unsweetened coconut and used pumpkin pie spice - I was plumb out of baking spices except for pumpkin!)

Directions: 1. Preheat an oven to 350°F. Grease 6 wells of a standard nonstick muffin tin. 2. Combine the eggs, oil and vanilla in a small bowl. Using a whisk beat until frothy about 1 minute. Shred the zucchini, add it to the bowl mixing to combine. 3. Add the flax meal, protein powder, granular sugar substitute, baking powder, salt, and spices. Mix with a spoon to combine. 4. Bake for 25 minutes until slightly puffed, golden and cooked through. Enjoy!

Lemon Cheese Cake…Hooterville Style

Low Carb, Gluten Free  - Taste Good and Satisfying…I love to bake, and I felt a bit depressed when I switched to gluten free/low carb...I did reading and extensive searching and found that I can still eat my favorite foods, just prepared with different ingredients.  I am growing to like the bread  - it requires taste adjustment -  as it is not the same texture I like. (working on this)
I have come familiar with Erythritol and Xylitol (I read some fuss on this.. But sugar is worse, in my opinion)

I love Cheese Cake - Lemon too,,, so I tried a few and finally hit the jackpot…. Oh, yes, this is a keeper….  I found on the internet - “Cleochatra’s Ultimate Cheesecake - Your Lighter Side”  I followed the recipe as it is stated,,, It is a Keeper!!  I have lost a size and 12 pounds in 4 weeks - Not bad as a benefit to monitor my blood sugar and Gluten - And I get the Cake too!

Makes 16 servings. Nutritional Information for one serving: Calories: 351, Carbohydrates: 29g, Fiber: 2g, Sugar Alcohols: 21g, Net Carbs: 6g, Protein: 8g, Fat: 8g  

BREAD - you can eat, WAIST forgiving TOO!

I made a decision to lose some pounds... again!! I know, some of us struggle... After two knee replacements and health issues, I gained 20 pounds... I have recently dropped 12 pounds in 4 weeks.... I ditched sugar and carbs.... Today, I made some bread.  I absolutely Love Bread- toasted with JAM...  I make jam and I find I give it mostly away due to the fact I can't eat gluten, not allergic to gluten, just causes me to retain weight and other issues.

I have been searching the internet for bread recipes and taking advantage of the hard work folks put into developing their favorite recipe,,, I would share the recipe, but I don't have the permission yet... I give credit where credit belongs....

One Good Cookie...Gluten Free Chocolate Chip Cookies

Cookie Lovers! - Got a new one for you to try!

How many of you are like me?  review recipes and wonder? - well wonder no more.....These are good - simple, fast, and like I said a few words back....GOOD.  I used Bob's Red Mill, Super fine Almond Flour (Bob you are welcome for the free plug, with the exception of the price- yikes)

This is my second batch, so good I wanted to take to work to share with a Gluten challenged friend...I can eat flour, I just wanted a light, protein enriched, low carb choice.

With the coconut oil, maple syrup - the cookie needs no other sugar

Some ingredients + Eggs, Vanilla

Notes:  it is super easy to make, and stirring in the baking chips, like pushing around a cloud... I think this recipe would be good for those that suffer from arthritis, as it does not put stress on the hands or wrists.
